Only the oaks of the wood of the Limousin and of Tronçais (planted by Colbert to produce the masts of boats of Royal Navy built in Rochefort, charentais port situated next to vineyard) are perfectly appropriated for the construction of the barrels. They give to the Cognac its superb gilt color and its aroma so particular. The "douelles" of oaks allow also a slow oxidation facilitated by the porous walls of the barrels.
...At the end of close friends transfers, the Cognac acquired this bouquet, this dainty savour and this hot color that only the years could bring to him.
...These operations are accompanied by an intense evaporation which is like a third distillation. It is the " share of the angels " which, each year, sees equivalent of more than 3 times french consumption, to be diluted in the air. This evaporation also results in the proliferation of microscopic mushrooms which give to the tiles roofs and the walls a dark gray hue, black sometimes, very characteristic.
...Family BAUDRY thus preserves a brandy stock which allows him to elaborate its own cognac.
